Pasta pesto

Ongetwijfeld een recept welke je al kent en waarmee ik je niks nieuws leer. Ik heb dan ook de pasta peso niet bedacht. Al hoop ik soms van wel, toch twijfel ik er sterk aan. De kracht van deze pasta is (net zoals bij de Aglio Olio) de eenvoud. De pesto zelf maken is een feestje en soms heb ik het halve bakje al stiekem opgegeten voordat ik de pesto door de spaghetti meng. Als je eenmaal hooked aan deze pasta’s bent kan ik je verzekeren dat je een spaghetti Bolognese zoals we die in Nederland maken echt teveel van het goede vindt. Less is more, maar goede ingrediënten zijn wel heel belangrijk!

Ingrediënten (voor 4 personen)

  • 400 gram spaghetti of spaghettini
  • 30 gram pijnboompitten
  • 40 gram Parmezaanse kaas (geraspt)
  • 1 teentje knoflook
  • 15 gram of zeker 2 handjes vol basilicumblaadjes (je kan hier niet teveel van hebben, zal je snel genoeg merken)
  • olijfolie
  • 10 lekkere kleine tomaatjes
  • peper + zout

Zet alvast water op voor de pasta, doe er wat zout bij. Doe ondertussen 2/3 van de pijnboompitten, 2/3 van de kaas, de knoflook, de basilicum en zeker 3 eetlepels olijfolie in een klein mixertje. Als je een staafmixer hebt is dat ook prima! Doe er wat peper en zout bij en mix tot het een mooie gladde suspensie is. Proef even. Proef nog maar een keer als je het lekker vindt. Bedenk dan of er nog wat peper en zout naar jou smaak bij mag. Vind je het nog te dik, dan doe je er een heel klein beetje water bij. Vind je het te dun, dan doe je er nog wat Parmezaanse kaas of pijnboompitten bij. Het komt erop neer dat het meer gaat om wat jij lekker vindt qua smaak dan de precieze hoeveelheid van ingrediënten. Kook de pasta volgens gebruiksaanwijzing. Snijdt ondertussen de tomaatjes in 2. Giet de pasta af (vang een half glaasje kookvocht op) en doe het terug in de pan, samen met een half kopje kookvocht. Doe de pesto erbij en roer lekker door de pasta op heel laag vuur. Doe dit tot alles verdeeld is over de pasta. Serveer met de tomaatjes, pijnboompitten en wat extra kaas eroverheen en je hebt een heerlijk gerecht!

This is without a doubt a recipe you may have known for years and there isn’t anything new about this dish I can teach you. I was not the one that invented this recipe. Although sometimes I wish I had, but I highly doubt it. The secret to this pasta (just as the Aglio Olio) is simplicity. Creating this pasta is a celebration and sometimes I already secretly ate half the bowl before even mixing the pesto and spaghetti together. Once your hooked on this pasta, I can assure you that you will find a spaghetti Bolognese, in Dutch style, really too much. Less is more they say, but ingredients of good quality are much more important!

Ingredients (4 servings)

  • 400 grams of spaghetti or spaghettini
  • 30 grams of pine nuts
  • 40 grams of Parmesan cheese (grated)
  • 1 clove of garlic
  • 15 grams of at least 2 handfuls of basil leaves (you can not have too much of this, you will notice soon enough)
  • Olive oil
  • 10 small tasty tomatoes
  • Pepper and salt

Start boiling the water to cook the spaghetti, add some salt. Meanwhile, put 2/3rd of the pine nuts, 2/3rd of the Parmesan cheese, garlic, basil and at least 3 tablespoons of olive oil into a mixer. If you have a blender that’s fine too! Add some pepper and salt and mix the ingredients until you’ve created a smooth substance. Have a taste. Have another taste if you really enjoy the flavor. Add more pepper or salt as you like. If you find the substance still too thick, just add a bit of water to it. Is it too thin, add some Parmesan cheese or some pine nuts. Bottom line is you have to play around with the ingredients until you have created your perfect flavor. Cook the spaghetti as instructed. Slice the tomatoes in half. Drain the spaghetti (save half a cup of the cooking liquid) and put it back into the pan, along with half a cup of the cooking liquid. Add your pesto and nicely stir the pasta at very low heat. Stir until everything is evenly spread throughout the pasta. Serve with tomatoes, pine nuts and add some extra Parmesan cheese on top and you will have a delicious dish!
